Rocket & Fig Salad with Walnut Dressing
Ingredients
- 55g (1/2 cup) walnut halves
- 80ml (1/3 cup) olive oil
- 80ml (1/3 cup) walnut oil
- 60ml (1/4 cup) red wine vinegar
- 1 tbsp wholegrain mustard
- Pinch of sugar
- Pinch of salt
- 1 x 80g pkt baby rocket leaves
- 3 figs, thinly sliced lengthways

Place walnuts in a medium non-stick frying pan over medium heat. Cook, stirring occasionally, for 3 minutes or until toasted (see microwave tip). Remove from heat. Coarsely chop and place in a jug.

Add the olive oil, walnut oil, vinegar and mustard. Use a jug whisk to whisk until combined. Taste and season with sugar and salt.

Place the rocket and fig in a large serving bowl. Pour over the walnut dressing and gently toss to combine. Serve immediately.
