Rocket, fennel & apple salad
Ingredients
- 2 tbsp extra virgin olive oil
- 1 tbsp white balsamic vinegar
- 1 tbsp wholegrain mustard
- 1 bunch rocket, ends trimmed, coarsely torn
- 1/4 treviso lettuce, leaves separated, coarsely torn
- 1 fennel bulb, trimmed, quartered, thinly sliced
- 2 tbsp fresh lemon juice
- 1 Red Delicious apple, quartered, cored, thinly sliced

Whisk the oil, vinegar and mustard in a small bowl. Taste and season with salt and pepper.

Place the rocket, treviso and fennel in a large bowl.

Combine the lemon juice and apple in a bowl. Add to the rocket mixture. Drizzle over the dressing and toss to combine.
