Strawberry Blue Cheese & Rocket Salad
Ingredients
Dressing
- 1/4 cup (60ml) white balsamic (see note)
- 1 tsp Dijon mustard
- 1/2 cup (125ml) extra virgin olive oil
Salad
- 1 bunch rocket
- 250g punnet strawberries, halved
- 4 prosciutto slices
- 4 slices woodfired bread, grilled or toasted
- 200g soft blue cheese, crumbled

Place balsamic 1/4 cup (60ml) white balsamic (see note), mustard 1 tsp Dijon mustard and oil 1/2 cup (125ml) extra virgin olive oil in a bowl. Season with sea salt and freshly ground black pepper, then whisk to combine.

Combine the rocket 1 bunch rocket and strawberries 250g punnet strawberries, halved in a large bowl, then tear over strips of prosciutto 4 prosciutto slices. Tear the grilled bread 4 slices woodfired bread, grilled or toasted into chunks and add to the salad with the crumbled blue cheese 200g soft blue cheese, crumbled. Toss gently to combine, then drizzle with the dressing and serve immediately.
