- 1 yellow witlof, leaves separated
- 1 bunch rocket, trimmed
- 3 stalks red kale, leaves chopped
- 250.00g strawberries, hulled, halved
- 62.50 ml natural almond kernels, toasted
Strawberry Balsamic Vinaigrette
- 125g strawberries, hulled, halved
- 2 tbsp grapeseed oil (see notes)
- 1 tbsp honey
- 3 tsp balsamic vinegar
- 1 tbsp finely chopped fresh basil leaves

Make Strawberry Balsamic Vinaigrette Place strawberries, oil, honey and vinegar in a small food processor. Process until smooth. Season with salt and pepper. Stir in basil (see notes).

Place witlof, rocket, kale, strawberries and almonds on a serving plate. Drizzle with dressing. Serve.
