Air Fryer Asparagus

Ingredients
- 2 tablespoons red wine vinegar
- 2 tablespoons extra virgin olive oil
- ¼ teaspoon kosher salt
- ⅛ teaspoon crushed black pepper
- 1 tablespoon Dijon mustard
- 2 tablespoons parsley (finely chopped)
- 2 garlic cloves (finely minced)
- 1 pound asparagus ((1 bunch), tough ends trimmed)

Whisk together all ingredients except the asparagus in a small bowl. Coat the asparagus evenly by drizzling the dressing over it and using your hands to distribute it thoroughly.

Let it marinate until ready to air fry, at least 10 minutes or up to a few hours.

In batches, as needed air fry the asparagus at 400F in a single layer for 5 minutes, remove and shake the basket then continue air frying for another 3 to 5 minutes, depending on the thickness.
