R.I.P Sandwiches
Ingredients
- 1 dark rye loaf, cut into 24 thin slices
- 250g soft cream cheese
- 62.50 ml finely chopped chives
- 2 Lebanese cucumbers, thinly sliced
- Mustard cress or alfalfa, to garnish

Lay 12 slices of bread on the workbench.

Set aside a quarter of the cream cheese to decorate, then mix remaining cream cheese with the chives. Season with sea salt and freshly ground black pepper and spread on the bread. Top with cucumber slices and remaining bread, then halve each sandwich.

Spoon the remaining cream cheese into a piping bag with a small nozzle attached. Pipe a border around the edge of each sandwich and write RIP in the centre. Scatter cress or alfalfa over a platter, then sit the sandwiches in the 'grass' to look like gravestones in a cemetery.
