Prawn & Watermelon Bites
Ingredients
- 20 cooked prawns, peeled, deveined
- 1 garlic clove, crushed
- 1 tbsp extra virgin olive oil
- 1.5kg-piece seedless watermelon, rind removed
- 150g goat's cheese
- 20 fresh mint leaves
- 1 tbsp sumac

Combine the prawns, garlic and oil in a glass or ceramic dish. Set aside for 10 minutes to marinate.

Cut twenty 1cm-thick, 7cm-long triangles from the watermelon. Cut the goat's cheese into 10 slices, then cut each slice in half to make 20 pieces. Top each watermelon triangle with a piece of goat's cheese, a mint leaf and a prawn. Sprinkle with the sumac. Arrange on a platter.
