Prawn and watermelon salad
Ingredients
For the salad
- 200g cooked prawns, peeled and deveined
- 500g watermelon, deseeded and chopped
- 1 red onion, thinly sliced
- 1 red chilli, finely chopped
- small bunch of fresh mint, leaves picked
- 2 tbsp extra virgin olive oil
- 1 tbsp lime juice
- sea salt and black pepper
Instructions

Combine the prawns, watermelon, red onion and chilli in a bowl.

Add the mint, olive oil and lime juice, then season with salt and pepper.
