Crunchy Panko-Crusted Baked Tilapia
Ingredients

- Cooking spray, for the baking pan
- 4 tilapia fillets (about 6 to 8 ounces each, 1 1/2 to 2 pounds total)
Coating
- 2 tablespoons light mayonnaise
- 2 teaspoons honey Dijon mustard or Dijon mustard
- 1 cup panko bread crumbs
- 1/2 cup fine dry bread crumbs
- 1 tablespoon dried parsley flakes
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt or about 3/4 teaspoon seasoned salt blend
- Dash of pepper

Preheat oven to 400°F (200°C). Lightly grease a baking pan with cooking spray.

In a shallow dish, combine the panko bread crumbs, dry bread crumbs, parsley, paprika, onion powder, salt, and pepper.

In a small bowl, mix together the mayonnaise and Dijon mustard.

Brush the tilapia fillets with the mayonnaise mixture, then dredge them in the panko crumb mixture, pressing gently to adhere.
