Cheeseburgers

- 500g lean beef mince
- 1 (about 110g) carrot, peeled, coarsely grated
- 1 (about 120g) zucchini, coarsely grated
- 1 green shallot, trimmed, chopped
- 1 egg, lightly whisked
- 1 tbsp olive oil
- 50g cheddar, thinly sliced
- 10 small butter lettuce leaves, washed, dried
- 10 small seeded dinner rolls
- Tomato sauce, to serve

Place the beef mince, carrot, zucchini, green shallot and egg in a large bowl. Use your hands to mix until well combined. Divide the mixture into 10 equal portions and shape each into a round patty.

Heat the oil in a large non-stick frying pan over medium heat. Add 1/2 the patties and cook for 4-5 minutes each side or until golden and cooked through. Place 1/2 the cheddar slices on top of the patties and transfer to a plate lined with paper towel. Cover loosely with foil to keep warm. Repeat with the remaining patties and cheddar.

Place a lettuce leaf on the base of each roll, top with a patty and drizzle with tomato sauce. Place the tops of the rolls on the burgers and serve immediately.
