Baked Stuffed Jumbo Shrimp Recipe
Ingredients
For the Shrimp
- 12 jumbo shrimp
- 1/3 cup fresh lemon juice
- 1 tablespoon chopped parsley
- 2 teaspoons grated fresh ginger
For the Stuffing
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 12 cloves garlic, minced
- 1 cup dried breadcrumbs, or cracker crumbs
- 2 tablespoons fresh lemon juice
- 3 tablespoons chopped parsley

Prepare the shrimp: Devein the shrimp, leaving the tails on. Place the shrimp in a bowl and pour the lemon juice over them. Sprinkle with parsley and ginger. Cover and refrigerate for at least 30 minutes.

Make the stuffing: In a skillet, heat the olive oil and butter over medium heat. Add the garlic and cook for about 1 minute, until fragrant. Stir in the breadcrumbs, lemon juice, and parsley. Cook for another 2-3 minutes, until the breadcrumbs are lightly toasted.

Stuff the shrimp: Preheat oven to 375 degrees F (190 degrees C). Butterfly the shrimp by making a shallow cut down the back, being careful not to cut all the way through. Open the shrimp like a book and fill with the breadcrumb mixture. Arrange the stuffed shrimp in a baking dish.
