- 8 chicken wings or 16 drumettes and wing pieces
Frying
- 4 cups canola, vegetable, or peanut oil, for frying
Sauce
- 2 tablespoons hot sauce, such as Frank's Red Hot or Louisiana
- 1 1/2 tablespoons unsalted butter, plus more if needed
- 1/2 teaspoon distilled vinegar
- Brown sugar, to taste
- Kosher salt, to taste
Serving
- Blue cheese dressing, ranch dressing, or garlic Parmesan dip, for serving

Heat oil in a large, heavy-bottomed pot or deep fryer to 350°F (175°C).

Fry the wings in batches for about 8 to 10 minutes, or until golden brown and cooked through.

While the wings are frying, prepare the sauce by combining the hot sauce, butter, and vinegar in a small saucepan.

Heat the sauce over low heat, stirring until the butter is melted and the sauce is well combined.
