Wild boar burgers
Ingredients
For the burgers
- 500g wild boar mince
- 1 red onion, finely chopped
- 1 apple, peeled, cored and grated
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 4 slices of blue cheese
- 4 burger buns
- Olive oil, for cooking
For the slaw
- 100g red cabbage, finely shredded
- 50g carrot, peeled and grated
- 2 tbsp apple cider vinegar
- 1 tbsp olive oil
- 1 tsp Dijon mustard
- 1 tbsp chopped chives

To make the slaw, combine the red cabbage and carrot in a bowl. In a separate bowl, whisk together the apple cider vinegar, olive oil and Dijon mustard. Pour over the cabbage and carrot, and toss to combine. Stir in the chives and season to taste.

Gently mix the wild boar mince, red onion, grated apple, Worcestershire sauce, smoked paprika and cumin in a bowl. Season to taste.

Divide the mixture into 4 and shape into burgers. Press a slice of blue cheese into the centre of each burger.

Heat a little olive oil in a frying pan over medium-high heat. Cook the burgers for 4-5 minutes on each side, or until cooked through.

Toast the burger buns, then fill with the wild boar burgers and slaw. Serve immediately.
