Brie-stuffed beef burgers
Ingredients
Burgers
- 400g beef mince
- 20g (1/4 cup) fresh breadcrumbs (made from day-old bread)
- 2 egg yolks
- 1 brown onion, coarsely grated
- 2 tbsp HP sauce
- 1 tsp white sugar
- 2 garlic cloves, crushed
- 1/2 cup chopped fresh continental parsley
- 50g brie, cut into 4 slices
Assembly
- Olive oil spray
- 4 sourdough bread rolls, split
- 2 tbsp whole-egg mayonnaise
- 1 tsp wholegrain mustard
- 70g mixed salad leaves
- 2 tomatoes, thinly sliced
- Bread and butter cucumbers, to serve

Place the beef, breadcrumbs, egg yolks, onion, HP sauce, sugar, garlic and parsley in a bowl. Season with salt and pepper. Mix until well combined. Shape the mixture into 4 patties. Place 1 slice of brie in the centre of each patty. Shape the patty around the brie to cover completely.

Lightly spray a non-stick frying pan with oil and heat over medium heat. Cook the patties for 5 minutes each side or until cooked through.

Meanwhile, preheat a chargrill on medium. Lightly spray the cut-side of the bread with oil. Cook bread, cut-side down, for 2 minutes or until golden.

Combine mayonnaise and mustard in a small bowl. Divide the salad leaves among the bread bases. Top with the patties, tomato and mayonnaise mixture. Top with cucumbers and bread tops.
