Traditional Scottish Porridge
Ingredients
Porridge
- 4 ounces rolled oats, about 1 cup plus 3 tablespoons
- 9 1/2 ounces water, or milk, about 1 cup plus 3 tablespoons
- 1 pinch kosher salt
Serving
- 2 to 3 tablespoons maple syrup, brown sugar, or golden syrup
- 1 teaspoon jam or berries

Combine the oats, water (or milk), and salt in a medium saucepan.

Bring to a boil over medium heat, then reduce the heat to low and simmer for 5 to 10 minutes, stirring frequently, until the porridge is thick and creamy.
