Super toasted granola with chewy fruit
Ingredients
For the granola
- 200g rolled oats
- 100g mixed seeds (sunflower, pumpkin, sesame)
- 50g mixed nuts (almonds, walnuts, pecans)
- 50g flaked almonds
- 2 tbsp coconut oil
- 2 tbsp maple syrup
- 1 tbsp golden syrup
- 1 tsp vanilla extract
For the chewy fruit
- 100g dried apricots
- 100g dried cranberries
- 50g raisins

Preheat the oven to 180°C/gas mark 4.

Spread the oats, seeds, nuts and flaked almonds out on a large baking tray.

Melt the coconut oil, maple syrup and golden syrup together in a saucepan.

Pour the melted mixture over the oats and nuts, and stir well to coat.

Bake for 20-25 minutes, or until golden and toasted, stirring halfway through.

Remove from the oven and stir in the vanilla extract.

Leave to cool completely.

Add the dried apricots, cranberries and raisins.

Store in an airtight container for up to 1 month.
