Smoky pork ribs with mango salsa
Ingredients
Marinade
- 1/3 cup (80ml) good-quality barbecue sauce
- 1 tbsp tomato paste
- 1/4 cup (60ml) apple cider vinegar
- 2 tbsp brown sugar
- 3 tsp smoked paprika (pimenton)
- 3 garlic cloves, finely chopped
- 2 tsp sea salt
Ribs
- 1.5kg pork spare ribs
Mango Salsa
- 1 mango, chopped
- 1 red capsicum, chopped
- 1 bunch coriander, leaves chopped

To make the marinade, combine the barbecue sauce, tomato paste, vinegar, sugar, paprika, garlic and 2 tsp sea salt in a bowl. Add ribs, turn to coat, then cover and chill for at least 2 hours.

Preheat oven to 160C. Drain the ribs, reserving the marinade. Place ribs in a large roasting pan, cover with foil and cook for 1 hour. Remove foil and increase heat to 200C. Add 1/4 cup (60ml) water to the pan and baste the ribs with reserved marinade.

Cook for a further 50 minutes, scraping the bottom of the roasting pan with a wooden spoon and basting the ribs with caramelised pan juices every 10-15 minutes.

Meanwhile, place mango, capsicum and coriander in a bowl and toss to combine.

Slice ribs, brush with any remaining pan juices and serve with mango salsa.
