DJ BBQ's rad rum ribs
Ingredients
For the ribs
- 2kg pork ribs
- 2 tbsp smoked paprika
- 1 tbsp ground cumin
- 1 tbsp cayenne pepper
- 2 tsp ground allspice
- 2 tsp sea salt
- 1 tsp black pepper
For the sauce
- 2 tbsp olive oil
- 2 red chillies, finely chopped
- 4 cloves of garlic, crushed
- 1 inch ginger, grated
- 100ml dark rum
- 400g passata
- 2 tbsp Worcestershire sauce
- 2 tbsp soy sauce
- 1 tbsp maple syrup
- 1 tbsp apple cider vinegar

Get your barbecue going.

Mix the spices together in a bowl.

Rub the spice mix all over the ribs.

Place the ribs on the barbecue and cook for 2-3 hours, turning occasionally.

While the ribs are cooking, make the sauce. Heat the olive oil in a saucepan over medium heat.

Add the chillies, garlic and ginger and cook for 2-3 minutes, until softened.

Pour in the rum and let it bubble for a minute or two, until the alcohol has evaporated.

Add the passata, Worcestershire sauce, soy sauce, maple syrup and apple cider vinegar.

Bring to a simmer and cook for 15-20 minutes, until the sauce has thickened.

Brush the ribs with the sauce during the last 30 minutes of cooking.

Serve immediately.
