Slow Cooker Pork Loin Roast
Ingredients
Roast
- 1 (about 3 pounds) boneless pork loin roast
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon salt
- 2 tablespoons olive oil
Sauce
- 1 1/2 cups chicken stock, low sodium or salt free
- 1/2 lemon, juiced, about 1 1/2 tablespoons
- 1 tablespoon soy sauce
- 1 teaspoon Worcestershire sauce
Slurry
- 2 tablespoons cornstarch
- 1 tablespoon cold water

Combine garlic powder, thyme, paprika, pepper, and salt in a small bowl.

Rub the spice mixture all over the pork loin roast.

Heat olive oil in a large skillet over medium-high heat. Sear the pork loin on all sides until browned.

Transfer the pork loin to a slow cooker.

In a separate bowl, whisk together chicken stock, lemon juice, soy sauce, and Worcestershire sauce.

Pour the sauce over the pork loin in the slow cooker.

Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the pork is tender.

In a small bowl, whisk together cornstarch and cold water to create a slurry.

During the last 30 minutes of cooking, stir the cornstarch slurry into the slow cooker. Cover and cook until the sauce has thickened.
