Skate baked in the bag with artichokes, purple potatoes, capers and crème fraîche
Ingredients
For the skate
- 2 skate wings, about 200g each
- 1 lemon, juice only
For the traybake
- 1 tbsp olive oil
- 200g new potatoes, halved if large
- 200g purple potatoes, halved if large
- 200g artichoke hearts, quartered
- 100g capers, drained
- 100ml crème fraîche
- 2 sprigs of thyme, leaves picked
Instructions

Preheat the oven to 200°C/400°F/gas mark 6.

Place the potatoes in an oven bag with the artichoke hearts, capers, crème fraîche and thyme.

Season the skate wings with salt and pepper, then squeeze over the lemon juice.

Place the skate wings on top of the potatoes in the bag.

Seal the bag and bake for 20–25 minutes, or until the potatoes are tender and the skate is cooked through.
