Pork skewers with spiced cracked wheat salad
Ingredients
- 125ml (1/2 cup) fresh orange juice
- 2 tbsp chopped fresh coriander
- 2 tsp ground coriander
- 2 tsp honey
- 500g pork loin steaks, cut into 2cm pieces
- 160g (1 cup) Naytura Cracked Wheat
- 200g green beans, topped, cut into 3cm lengths
- 1 small red onion, halved, thinly sliced
- 50g (1/3 cup) craisins (dried cranberries)
- Olive oil spray
- 40g (1/4 cup) chopped pistachio kernels

Combine the orange juice, fresh coriander, ground coriander and honey in a bowl. Place the pork in a glass or ceramic bowl. Add half the orange juice mixture. Toss to coat. Cover and place in the fridge for 30 minutes to marinate.

Meanwhile, place the cracked wheat in a large heatproof bowl. Cover with boiling water. Set aside for 20 minutes or until tender. Drain in a fine sieve. Use the back of a spoon to squeeze out excess moisture. Transfer to a clean bowl.

Cook the beans in a saucepan of boiling water for 2 minutes or until bright green and tender crisp. Refresh under cold running water. Drain. Add beans, onion, craisins and remaining orange juice mixture to the cracked wheat. Stir to combine.

Thread the pork onto skewers. Preheat a chargrill on medium-high. Spray with olive oil spray. Cook the skewers on grill for 2-3 minutes each side or until light golden.

Divide the salad among serving plates. Top with the pork skewers and sprinkle with the pistachio to serve.
