Pork fried noodles
Ingredients

- 150g leftover higher-welfare roast pork
- 2 cloves of garlic
- 1 red chilli
- 1 inch ginger
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp rice wine vinegar
- 1 tsp sesame oil
- 200g egg noodles
- 100g pak choi
- 100g mushrooms
- 2 spring onions
Instructions

Finely slice the garlic and chilli. Peel and grate the ginger.

In a bowl, combine the soy sauce, oyster sauce, rice wine vinegar and sesame oil.

Cook the noodles according to the packet instructions. Drain and rinse with cold water.

Heat 1 tablespoon of oil in a wok or large frying pan. Add the garlic, chilli and ginger and fry for 1 minute.

Add the pork and stir-fry for 2-3 minutes until heated through.

Add the pak choi and mushrooms and stir-fry for 2 minutes until softened.

Add the noodles and sauce and stir-fry for 2-3 minutes until everything is well combined.

Serve immediately, garnished with spring onions.
