Oatmeal Chocolate Chip Cookies

Ingredients
- 1/2 cup (4-ounces) unsalted butter, room temperature
- 3/4 cup packed light brown sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 1/2 cups rolled oats
- 1 teaspoon salt
- 1 cup semisweet chocolate chips
- 1-2 teaspoon ground cinnamon

Gather the ingredients.

In a stand mixer fitted with the paddle attachment or using a handheld mixer, cream the butter and sugar together until light and creamy, about 2 minutes.

Add the eggs and vanilla and mix continue to mix until well combined, about 45 seconds.

Add the flour, baking soda, rolled oats, ground cinnamon and salt. Mix on low speed until well combined, scraping down the bowl occasionally.

Fold in the chocolate chips.

Cover and refrigerate the dough for at least 20 minutes.

Meanwhile, position 2 racks in the upper and lower third of the oven and heat to 350 F. Line two large baking sheets with parchment paper.

Using a medium cookie scoop, arrange the dough on the prepared baking sheets about 1 1/2 inches apart.

Bake until slightly puffed and set with slightly golden brown edges, 10 to 12 minutes.

Remove from the oven and let the cookies cool on the baking sheets for about 10 minutes.
