Oat Cranberry Pear Bread
Ingredients
- 1 cup milk
- 2/3 cup rolled oats
- 60g butter, melted, cooled
- 1 egg, lightly beaten
- 1/4 cup golden syrup
- 1 1/3 cups self-raising flour
- 1 tsp baking powder
- 1/3 cup chopped almonds
- 1/2 cup dried cranberries
- 1/4 cup drained canned pears, chopped

Preheat oven to 180°C/160°C fanforced. Grease a 6cm-deep, 8cm x 17cm (base) loaf pan. Line base and sides with baking paper, allowing a 2cm overhang at long ends.

Combine milk and 1/2 cup oats in a large bowl. Set aside for 30 minutes to soak.

Add butter, egg and golden syrup to oat mixture. Stir to combine. Sift flour and baking powder over oat mixture. Add almonds and cranberries. Stir to combine. Add pear. Fold to combine. Spoon mixture into prepared pan. Sprinkle with remaining oats. Bake for 45 minutes or until a skewer inserted in the centre comes out clean. Stand in pan for 10 minutes. Turn out onto a wire rack to cool. Serve.
