Mashed Pumpkin with Maple & Butter
Ingredients
- 2kg butternut or Queensland blue pumpkin
- 40ml (2 tbsp) olive oil
- 80g (4 tbsp) unsalted butter, plus extra to serve
- 1/3 cup maple syrup, plus extra to drizzle
- 2 tbsp chopped flat-leaf parsley

Preheat oven to 180°C.

Cut the pumpkin in half, remove the seeds and place in a baking tray cut-side up and drizzle with the olive oil. Cover the pumpkin with foil and bake for one hour until soft. Set aside to cool slightly before scooping out the flesh and placing in a large bowl.

Meanwhile, melt the butter and maple syrup, add to the bowl and mash with the pumpkin. Stir in the parsley and season with salt and pepper. To serve, drizzle with extra butter and maple syrup.
