Italian super-food burgers
Ingredients
Burgers
- 2 small red onions
- 100ml cheap balsamic vinegar
- 500g lean minced beef
- 1 egg
- 50g breadcrumbs
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- 1 red chilli, finely chopped
- 100g grated Parmesan cheese
- 1 bunch basil, leaves picked and finely chopped
For the slaw
- 1 red cabbage, finely shredded
- 2 carrots, peeled and grated
- 1 red pepper, deseeded and finely sliced
- 2 spring onions, finely sliced
- 2 tbsp red wine vinegar
- 2 tbsp olive oil
- 1 tbsp Dijon mustard
- 1 tbsp honey
To serve
- 6 burger buns
- rocket
- 100g mozzarella cheese, torn

Get the onions cooking. Peel and finely slice the red onions, then place in a saucepan with the balsamic vinegar and a pinch of salt. Cook over a medium heat for 15-20 minutes, or until softened and syrupy. Set aside to cool.

Make the burger mixture. In a large bowl, combine the minced beef, egg, breadcrumbs, Worcestershire sauce, smoked paprika, chilli, Parmesan and basil. Season well and mix thoroughly. Divide into 6 equal portions and shape into burgers.

Cook the burgers. Heat a little oil in a frying pan over a medium-high heat. Cook the burgers for 4-5 minutes each side, or until cooked through.

Prepare the slaw. While the burgers are cooking, combine the red cabbage, carrots, red pepper and spring onions in a large bowl. In a separate bowl, whisk together the red wine vinegar, olive oil, Dijon mustard and honey. Pour over the slaw and toss to combine.

Assemble the burgers. Toast the burger buns, then spread with a little of the balsamic onion mixture. Top with a burger, a generous helping of slaw, mozzarella and rocket. Serve immediately.
