Gluten-Free Hazelnut Dark Chocolate & Coffee Friands
Ingredients
- 5 egg whites, lightly beaten
- 1 1/2 cups hazelnut meal
- 1 1/2 cups gluten-free pure icing sugar, sifted
- 2/3 cup gluten-free plain flour
- 150g butter, melted, cooled
- 30ml shot espresso coffee, cooled
- 1/2 x 180g block dark chocolate, chopped

Preheat oven to 190C/170C fan-forced. Grease and flour (see note) three 12-hole, 1 1/2 tablespoon capacity mini muffin pans. Combine egg white, hazelnut meal, icing sugar, flour, butter and espresso in a bowl. Divide mixture evenly between holes of prepared pans. Top with chocolate.

Bake for 15 minutes or until golden and just firm to touch. Stand in pans for 2 minutes. Turn onto a wire rack to cool. Serve.
