Hazelnut Pistachio White Chocolate Friands
Ingredients
- 1 1/2 cups icing sugar
- 1/2 cup plain flour
- 1 cup hazelnut meal
- 3/4 cup white chocolate chips
- 1/2 cup pistachio kernels, chopped
- 6 egg whites
- 185g butter, melted
- Icing sugar, for dusting

Preheat oven to moderate, 180C. Lightly grease 8 recesses of a mini loaf pan.

Sift icing sugar and flour together into a large bowl. Blend in hazelnut meal, 1/2 cup chocolate chips and pistachios.

In a small bowl, lightly whisk egg whites with a fork until frothy. Add to dry ingredients and mix lightly.

Blend in butter, stirring until combined. Divide mixture among prepared recesses. Sprinkle each with remaining chocolate chips.

Bake for 15-20 minutes until golden and cooked when tested with a skewer. Cool in pan for 5 minutes before turning onto a wire rack to cool completely. Serve dusted with icing sugar.
