- 1 pound extra small cooked shrimp, peeled, see Kitchen Notes below
- 1 cup finely chopped celery (about 3 ribs)
- 2 tablespoons finely chopped sweet onion
- 2 tablespoons finely chopped dill pickle
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon cayenne pepper, optional
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- 1/2 to 1 cup fresh white breadcrumbs

Combine the shrimp, celery, onion, dill pickle, pepper, cayenne pepper (if using), mayonnaise, and lemon juice in a medium bowl.

Gently stir to combine.

Add breadcrumbs, starting with 1/2 cup, and stir to combine. Add more breadcrumbs if needed to reach desired consistency.
