Crock Pot Chicken Cacciatore
Ingredients
- 1 medium onion, thinly sliced
- 1 1/2 pounds boneless, skinless chicken breasts or chicken thighs
- 2 cans tomato paste
- 8 ounces mushrooms, sliced
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 cloves garlic, minced
- 1 medium bay leaf
- 1/4 cup dry white or red wine
- 1/4 cup water, or chicken stock
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil

Gather the ingredients.

Put the sliced onion in bottom of the slow cooker.

Top with the chicken breasts or thighs.

In a bowl, combine the tomato paste, mushrooms, salt, pepper, garlic, bay leaf, wine, and water or stock; stir to blend thoroughly.

Spread the sauce mixture over the chicken.

Cover and cook on LOW 5 to 7 hours, or about 3 hours on HIGH. About halfway through the cooking time, add the oregano and basil.
