Crispy squid & prawns with homemade sweet chilli sauce
Ingredients
For the sweet chilli sauce
- 2 red chillies, finely chopped
- 2 garlic cloves, finely chopped
- 1 inch ginger, finely grated
- 2 tbsp rice vinegar
- 2 tbsp honey
- 1 tbsp soy sauce
- 1 tbsp sweet chilli sauce
For the crispy squid & prawns
- 250g cleaned squid, bodies cut into rings, tentacles left whole
- 250g peeled and deveined prawns
- 100g cornflour
- 1 tsp baking powder
- 1 tsp salt
- Vegetable oil, for frying
- 1 lime, cut into wedges, to serve

To make the sweet chilli sauce, place all the ingredients in a saucepan and simmer for 10 minutes, or until slightly thickened. Set aside.

In a bowl, combine the cornflour, baking powder and salt. Add the squid and prawns and toss to coat evenly.

Heat the vegetable oil in a large, deep saucepan or fryer to 180°C. Fry the squid and prawns in batches for 2-3 minutes, or until golden and crispy. Drain on kitchen paper.

Serve immediately with the sweet chilli sauce and lime wedges.
