Chilli basil prawn stir-fry noodles
Ingredients
- 400g wok-ready Singapore-style noodles
- 2 tbsp peanut oil
- 500g peeled prawns, tails intact
- 1 red onion, cut into wedges
- 200g snow peas, trimmed
- 2 long red chillies, thinly sliced diagonally
- 2 tbsp sweet chilli sauce
- 2 tsp fish sauce
- 2 tsp lime juice
- 20g punnet basil, leaves picked
- Sliced red chilli, extra, to serve

Place noodles in a bowl and cover with boiling water. Set aside for 1 min. Separate noodles with a fork. Drain.

Meanwhile, heat 1 tablespoon oil in a wok over high heat. Add prawns and cook for 1 min or until just changed colour. Transfer to a bowl.

Heat remaining oil in the wok. Cook onion and snow peas for 2 mins or until onion is starting to brown. Add chilli, sweet chilli sauce, fish sauce, lime juice, prawns and noodles and stir-fry for 2 mins or until heated through. Stir in basil. Serve topped with extra chilli.
