Stir-fried warm salad of prawns and baby courgettes
Ingredients
For the salad
- 200g baby courgettes, trimmed
- 200g peeled prawns (defrosted if frozen)
- 1 red chilli, finely sliced
- 2 garlic cloves, finely sliced
- 1 inch ginger, peeled and grated
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp olive oil
- small bunch of fresh coriander, chopped

Trim the courgettes and slice them into ribbons using a vegetable peeler.

If using frozen prawns, defrost them thoroughly.

Heat the olive oil in a large frying pan or wok.

Add the chilli and garlic, and fry for 1 minute until fragrant.

Add the ginger and courgette ribbons, and stir-fry for 3-4 minutes until slightly softened.

Add the prawns and cook for 2-3 minutes until pink and cooked through.

Stir in the soy sauce and lime juice.
