Prawn salad with chilli and white cabbage
Ingredients
For the salad
- 200g raw peeled prawns, deveined
- 1 small white cabbage, thinly sliced
- 1 red chilli, finely sliced (seeds removed if you prefer less heat)
- 2 spring onions, finely sliced
- 1 lime, juice and zest
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp olive oil
- small bunch of fresh coriander, roughly chopped

Bring a pan of water to the boil, add the prawns and cook for 2-3 minutes, until pink and opaque. Drain and refresh under cold water.

Meanwhile, combine the cabbage, chilli and spring onions in a large bowl.

In a separate small bowl, whisk together the lime juice and zest, fish sauce, soy sauce and olive oil.

Add the prawns to the bowl with the cabbage mixture, pour over the dressing and toss well.

Stir in the coriander and serve immediately.
