Crepes with lemon and sugar
Ingredients
- 1 cup milk
- 2 tsp vegetable oil
- 2 eggs, lightly beaten
- 1 cup plain flour
- 1 tsp butter
- 2 tbsp sugar
- 2 medium lemons, halved

Whisk milk 1 cup milk, oil 2 tsp vegetable oil and egg 2 eggs, lightly beaten together in a jug. Place flour 1 cup plain flour in a bowl. Make a well in centre. Add milk mixture. Whisk until smooth. Cover. Stand for 30 minutes.

Melt butter 1 tsp butter in a 20cm (base), non-stick frying pan over medium heat. Pour 1/4 cup mixture into pan. Swirl to cover base. Cook for 1 minute or until light golden. Turn. Cook for 1 minute. Transfer to a plate. Cover to keep warm. Repeat with remaining mixture to make 8 crepes.

Sprinkle crepes with sugar 2 tbsp sugar. Squeeze over lemon 2 medium lemons, halved. Serve.
