This 8-Minute Pizza Cottage Cheese Toast Is My New Favorite
Ingredients
- 1 clove garlic
- 1 large slice sourdough bread
- 1/4 cup cottage cheese
- 1 tablespoon finely grated parmesan cheese, plus more for sprinkling
- 1 tablespoon drained and chopped sun-dried tomatoes in oil
- 1/4 teaspoon dried oregano
- Olive oil, for drizzling
- Optional toppings: fresh basil leaves, red pepper flakes

Preheat: If you're using an oven broiler rather than a toaster oven, preheat on high heat with the rack about 4 inches from the element.

Prepare the bread: Peel and slice the garlic clove in half. Rub the cut side all over the slice of bread.

Make the topping: In a small bowl, combine the cottage cheese, parmesan, sun-dried tomatoes, and oregano. Stir to combine. Spread the cheese mixture evenly on top of the bread. Sprinkle with more parmesan, if desired, and drizzle with a little olive oil.
