Super Breakfast Bowl
Ingredients
- 1 small orange, peeled, white pith removed
- 80g (1/2 cup) cooked quinoa (about 40g uncooked, see tip)
- 1/2 tsp ground cinnamon, plus extra, to serve
- 70g (1/2 cup) fresh blueberries
- 2 tsp finely chopped roasted unsalted almonds
- 3 tsp pepitas
- 90g (1/3 cup) natural yoghurt

Hold the orange over a bowl (to catch the juice). Use a sharp knife to remove the segments, cutting close to either side of the white membranes. Set aside segments.

Add the quinoa and cinnamon to bowl with juice. Stir until well combined. Add segments, blueberries, almonds and pepitas. Stir then top with yoghurt and extra cinnamon.
