Coconut Cranberry Apple Granola
Ingredients
- 3 cups traditional rolled oats
- 1 cup quinoa flakes
- 2/3 cup seed mix (see Notes)
- 1/2 cup whole sliced almonds
- 1/4 cup coconut oil
- 1/3 cup maple syrup
- 2/3 cup shredded coconut
- 1 tsp ground cinnamon
- 1/2 cup dried cranberries
- 1/3 cup dried apple, chopped
- Passionfruit yoghurt, to serve

Preheat oven to 180C/160C fan-forced.

Place oats, quinoa, seed mix, almonds, coconut oil, maple syrup, shredded coconut and cinnamon in a large bowl. Mix well to coat. Transfer to a roasting pan.

Bake for 45 minutes, stirring every 10 minutes, or until golden brown. Stir in cranberries and apple. Set aside to cool completely. Serve with passionfruit yoghurt.
