Smash burger tacos

Ingredients
- 500g beef mince
- 1 shallot or ½ small red onion, finely diced
- ½ tsp mixed dried herbs
- 8 mini tortillas
- vegetable or sunflower oil for frying
- 8 slices burger cheese, cheddar or monterey jack
For the toppings
- your choice of gherkins, shredded lettuce, tomato slices or your other favourite burger toppings

Combine the mince, shallots and dried herbs in a bowl until well combined. Divide the mixture into eight balls.

Press one ball down onto each tortilla to create thin burger patties that fill most of the tortilla, but with a small border of about 3cm.

Heat a drizzle of oil in one or two large frying pans over a medium heat and fry the tortillas, meat-side down, for 6-8 mins until the meat is cooked through, pressing the tortilla with a spatula while cooking. Once cooked, flip over, top with a slice of cheese and cook for 1-2 mins more. Serve the tacos filled with your favourite toppings.
