Sesame pancakes with char siu pork
Ingredients
Pancakes
- 1/2 cup plain flour
- 1 tbsp sesame seeds
- 1 egg, lightly beaten
- 1 cup milk
- salt and pepper
Filling
- 400g pork fillet, thickly sliced
- 2 tbsp char siu sauce
- olive oil cooking spray
- 50g snow pea sprouts, trimmed
- 12 garlic chives
- toasted sesame seeds, to serve

Place flour and sesame seeds in a bowl. Season with salt and pepper. Make a well in the centre. Add egg and milk. Whisk to combine. Cover and refrigerate for 30 minutes.

Combine pork and char siu sauce in a bowl. Spray a large frying pan with oil. Heat over medium-high heat. Cook pork, in batches, for 2 to 3 minutes each side or until browned and cooked through. Cool slightly. Thinly slice.

Spray pan with oil. Using 1 tablespoon batter per pancake, cook 1 pancake at a time for 1 to 2 minutes each side or until golden and cooked through. Transfer to a plate. Repeat with remaining batter to make a total 12 pancakes.

Place 1 pancake on a flat surface. Top with snow pea sprouts, pork mixture and toasted sesame seeds. Roll up tightly to enclose filling. Secure each pancake with a garlic chive. Repeat with remaining pancakes, snow pea sprouts, pork mixture, sesame seeds and chives. Serve.
