Reuben or Rachel Sandwich
Ingredients
For the Reuben Sandwich
- 2 slices rye bread
- 2 tablespoons Russian dressing
- 1/4 pound corned beef, thinly sliced
- 2 to 3 slices Swiss cheese
- 1/4 cup sauerkraut
- 1 tablespoon unsalted butter, softened
For the Rachel Sandwich
- 2 slices rye bread
- 2 tablespoons Russian dressing
- 1/4 cup coleslaw
- 1/4 pound turkey, thinly sliced, or pastrami
- 2 to 3 slices Swiss cheese
- 1 tablespoon unsalted butter, softened

Spread Russian dressing on one side of each slice of bread.

For the Reuben, layer corned beef, Swiss cheese, and sauerkraut on one slice of bread. For the Rachel, layer turkey or pastrami, Swiss cheese, and coleslaw on one slice of bread.

Top with the other slice of bread.

Spread butter on the outside of both slices of bread.

Cook in a skillet over medium heat for 2 to 3 minutes per side, or until golden brown and the cheese is melted.
