Pork, Feta & Tomato
Ingredients
- 400g mixed beans (butter beans and green beans), topped, halved
- 2 1/2 tbsp olive oil
- Salt & ground black pepper
- 4 (about 600g) pork leg steaks
- 1 medium tomato, sliced
- 2 tbsp fresh oregano leaves
- 120g Greek feta, sliced
- Extra olive oil, for greasing
- 1 lemon, quartered, to serve

Cook the beans in a saucepan of salted boiling water for 3-4 minutes or until tender crisp. Drain, refresh under cold running water and pat dry with paper towel. Place the beans and 1 1/2 tablespoons of the olive oil in a bowl. Season with salt and pepper and mix until well combined.

Use a meat mallet to flatten the pork steaks between sheets of plastic wrap until 5mm thick. Halve each pork steak. Top 4 pork steak halves with the sliced tomato, oregano and feta, dividing the ingredients evenly Top with remaining pork steak halves and secure the edges with toothpicks. Brush the pork with the remaining olive oil and season with salt and pepper.

Brush a barbecue grill or chargrill with oil to grease. Preheat on medium and cook the pork for 5-6 minutes on each side or until cooked to your liking. Serve pork with the beans and lemon wedges.
