Barbecued Pork Capsicum Skewers
Ingredients
- 1/3 cup lemon juice
- 1 garlic clove, crushed
- 2 tbsp oregano leaves, chopped
- 1 tbsp olive oil
- 800g pork neck (scotch fillet), trimmed, cut into 3cm cubes
- 3 small red onions, cut into thin wedges
- 1 large yellow capsicum, halved lengthways, deseeded, cut into 3cm pieces
- Olive oil cooking spray
- 200g reduced-fat tzatziki dip
- Green salad, to serve

Soak skewers in a shallow dish of cold water for 30 minutes. Drain.

Combine lemon juice, garlic, oregano, oil, and salt and pepper in a shallow ceramic dish. Add pork to marinade. Toss well to coat. Cover and refrigerate, turning occasionally, for 30 minutes.

Preheat a greased barbecue plate on medium heat. Thread onions, pork (reserving marinade) and capsicum onto skewers. Spray skewers with oil. Barbecue skewers, brushing with marinade and turning occasionally, for 10 to 12 minutes or until pork is cooked through.

Serve with tzatziki and salad.
