Pork with Leek and Sage

- 700g pork leg steaks, pounded, cut into serving-size portions
- 1/3 cup plain flour, seasoned
- 1 1/2 tbsp olive oil
- 1 leek, trimmed, washed, thinly sliced
- 1/2 cup beef stock
- 1/2 cup light cream
- 1/2 cup fresh sage leaves

Dust pork in flour (see note), shaking off excess. Set aside.

Heat 2 teaspoons oil in a large, non-stick frying pan over medium heat. Fry pork steaks for 1 to 2 minutes on each side or until just cooked through. Remove to a plate. Cover and keep warm.

Add remaining oil and leek to frying pan. Cook, stirring often, for 3 minutes or until soft. Add stock and cook for 2 minutes or until slightly reduced. Reduce heat to low. Add cream and sage. Season with salt and pepper. Stir to combine.

Return pork to frying pan. Cook for 1 to 2 minutes or until heated through. Serve pork steaks with steamed vegetables such as chat potatoes and broccoli.
