Pork Asian Green Stir Fry
Ingredients
- 400g pork fillet, cut into 1cm-thick slices
- 3 tbsp char siu sauce
- 1 1/3 cups (270g) Basmati rice
- 1 tbsp olive oil
- 1 red capsicum, deseeded, cut into thin strips
- 1 bunch baby choy sum, washed, cut into 3cm pieces
- 2 tsp grated fresh ginger
- 2 tsp crushed garlic
- 1 tbsp hoisin sauce
- 1/2 cup fresh mint leaves, torn
- 1/2 cup fresh coriander leaves
- 1 cup (65g) bean sprouts

Place the pork slices and 2 tablespoons of the char sui sauce in a bowl. Stir well to coat. Set aside for 30 minutes to marinate.

Cook the rice, according to packet instructions or until tender.

Meanwhile, heat half the oil in a large wok over a high heat. Add the capsicum, choy sum stems, ginger and garlic. Stir-fry for 2 minutes or until vegetables are just tender. Toss in the choy sum leaves and stir fry for 1 minute. Remove vegetables from the wok. Heat the remaining oil in the wok over a high heat. Add the pork and stir fry for 2-3 minutes or until the pork is just cooked. Return the vegetables to the wok with the hoisin and remaining char sui sauce. Toss well to combine.

Divide the rice and pork stir-fry among serving bowls. Top with mint, coriander and bean sprouts to serve.
