Pork & apple sauce
Ingredients
For the pork
- 1.2kg pork loin
- 1 tbsp olive oil
- 2 red onions
- 2 carrots
- 2 sticks of celery
- 2 bay leaves
- 500ml chicken stock
- 1 tbsp redcurrant jelly
- 1 tbsp balsamic vinegar
For the apple sauce
- 2 green eating apples
- 1cm piece of ginger
- 2 tbsp apple juice
For the rice
- 150g brown rice
Instructions

Preheat the oven to 180°C/gas mark 4.

Rub the pork loin with olive oil and season well.

Roughly chop the red onions, carrots and celery.

Place the vegetables in a roasting tray and sit the pork on top.

Add the bay leaves and pour in the chicken stock.

Roast for 45-50 minutes, or until the pork is cooked through.

Remove the pork from the oven and let it rest for 10 minutes before carving.

While the pork is resting, make the apple sauce.

Peel, core and chop the apples and ginger.

Place in a saucepan with the apple juice and simmer for 10-15 minutes, or until the apples are soft.

Mash with a fork or blend until smooth.

Cook the brown rice according to packet instructions.

Stir the redcurrant jelly and balsamic vinegar into the pan juices.

Serve the pork with the apple sauce, rice and pan juices.
