Ingredients
For the pork
- 1 pound pork loin, thinly sliced
- 1/2 tablespoon fish sauce
- 1 tablespoon oyster sauce
- 1/4 teaspoon sesame oil
For the stir-fry
- 3 tablespoons vegetable oil, divided, plus more as needed
- 1 cup chopped broccoli florets
- Fish sauce, to taste
- 7 ounces fresh wide rice noodle
- 1 tablespoon soy sauce
- 2 cloves garlic, minced
- 1 large egg
- Freshly ground black pepper, to taste
- Sriracha, for serving
Instructions

In a small bowl, combine the pork, fish sauce, oyster sauce and sesame oil. Cover and chill in the refrigerator for at least 30 minutes.

Bring 1-inch of water to a boil in a saucepan with a steamer. Add the broccoli to the steamer and cover; let steam until bright green, about 2 minutes.

Heat 1 tablespoon vegetable oil in a large skillet over medium high heat. Add the steamed broccoli and a splash of fish sauce; saute until tender-crisp, about 2-3 minutes. Transfer to a plate.

Add 1 tablespoon vegetable oil, rice noodle, soy sauce, and more fish sauce (about 1 tablespoon) to the skillet. Cook, stirring constantly, until the noodles are cooked through.

Add remaining 1 tablespoon vegetable oil, garlic and marinated pork to the skillet. Cook, turning occasionally, until cooked through, about 4-5 minutes.

Push the pork to one side of the pan and add the egg to the skillet. Let it cook for about 30 seconds; then gently toss to combine with the pork.

Stir in the broccoli and noodles until well-combined and heated through.

Serve immediately, with freshly ground black pepper and Sriracha for drizzling, if desired.
