Oaten Biscuits
Ingredients
Dough
- 160g (1 cup) wholemeal plain flour
- 130g (1 cup) natural oat bran
- 2 tbsp brown sugar
- 1 tsp salt
- 1/4 tsp bicarbonate of soda
- 75g butter, chopped
- 125ml (1/2 cup) water
Topping/Serving
- 1 egg, lightly whisked
- Natural oat bran, extra, to dust
- Blue cheese or cheddar, to serve

Preheat oven to 180°C. Line 2 baking trays with non-stick baking paper.

Combine the flour 160g (1 cup) wholemeal plain flour, oat bran 130g (1 cup) natural oat bran, sugar 2 tbsp brown sugar, salt 1 tsp salt and bicarbonate of soda 1/4 tsp bicarbonate of soda in a large bowl. Use your fingertips to rub the butter 75g butter, chopped into the flour mixture until it resembles fine breadcrumbs. Add the water 125ml (1/2 cup) water and use a round-bladed knife in a cutting motion to mix until mixture just comes together. Turn the dough onto a lightly floured surface and knead until smooth. Cover with plastic wrap and place in the fridge for 30 minutes to rest.

Divide the dough into 2 equal portions. Use a lightly floured rolling pin to roll out dough until about 3mm thick. Use a 5cm-diameter round pastry cutter to cut out biscuits. Place on prepared trays. Lightly brush the tops of biscuits with egg 1 egg, lightly whisked and sprinkle with the extra oat bran Natural oat bran, extra, to dust. Bake in preheated oven, swapping trays halfway through cooking, for 20 minutes or until golden brown. Set aside for 15 minutes to cool. Serve with blue cheese Blue cheese or cheddar, to serve, cheddar and brie.
