Louie and Gennaro's 'ultimate' cheeseburgers
Ingredients
For the burgers
- 1.5kg beef mince (20% fat)
- 4 brioche buns
- 4 slices of mature cheddar
- 4 slices of smoked bacon
- 1 red onion, finely sliced
- 4 little gem lettuces
- 4 vine-ripened tomatoes, sliced
- 4 dill pickles
- 4 tbsp mayonnaise
- 2 tbsp American mustard
- 2 tbsp Worcestershire sauce
- Olive oil
- Sea salt and black pepper
For the sauce
- 200g mayonnaise
- 2 tbsp ketchup
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika

Divide the beef mince into 4 equal portions and gently form into patties – don't overwork it, or they'll be tough. Season well with salt and pepper.

Heat a little oil in a heavy-based frying pan over medium-high heat. Fry the patties for 3-4 minutes on each side, depending on how you like them cooked. Add the bacon to the pan for the last few minutes of cooking.

While the burgers are cooking, make the sauce by combining all the ingredients in a bowl.

Toast the brioche buns until golden, then spread with a little sauce.

Assemble the burgers by layering the lettuce, tomato, pickle, burger, bacon, cheddar and onion on the bottom bun. Top with the other half of the bun and serve immediately.
