Honey Roasted Peanuts

- 2 tablespoons unsalted butter
- 1/3 cup honey
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 2 teaspoons kosher salt, divided
- 1 pound raw peanuts, or roasted unsalted
- 1/4 cup granulated sugar

Preheat oven to 350 degrees F (175 degrees C).

Lightly coat a large baking sheet with cooking spray.

In a large saucepan, melt the butter over medium heat. Stir in the honey, vanilla, cinnamon, and 1 teaspoon of the salt. Bring to a simmer, stirring constantly.

Add the peanuts and sugar to the saucepan and stir to coat evenly.

Spread the peanuts in a single layer on the prepared baking sheet.

Bake for 20 minutes, stirring halfway through, until the peanuts are golden brown and the honey mixture is bubbly.
